The print server will have at least these components:

Processor will consist of a main thread and a thread pool. The thread pool will be a limited number of workers available to process jobs. When workers are available, the main thread will regularly poll the queue and assign jobs to available workers.
Jobs and Workers should have some attribute(s) to represent their state. Ex. ready, running, blocked, dead.
The first statistic that comes to my mind is the average time it takes a job to complete for different sources (network, USB, etc). There are many other things you could gather info for, much of which depends on how much detail is flushed out in your system's design and how you decided to implement it.
