To achieve zero downtime, I would:
1) copy over the data into psql
2) check all SQL queries, and alter if needed (mySQL syntax is slightly different than psql syntax)
3) ran all my suite of tests (specifically integration tests) and add more testing of code using SQL queries if needed
4) manual testing in staging
5) back up production
6) migrate the latest data from production over into staging
7) push staging into production

I am prefer...

hadoop framework or any big data framework for migrating database...
